Smoked Haddock Quiche

Ingredients
1 lb. smoked haddock or cod fillets, skinned and cubed
12 oz. refrigerated pie crust
2 eggs, beaten
2/3 c. milk
1 tsp. Dijon mustard
1 c. cheddar cheese, shredded
2 Tbsp. chives, chopped
pepper, to taste

Directions:

1. Preheat oven to 375°F.

2. Roll out the pastry and line the base of a 12" pie or quiche dish.

3. Mix the eggs, milk, mustard, cheese, chives and fish together. Pour into pastry base and season with pepper. Bake for 25 min, or until set and golden brown.

4. Serve with a green salad.
